Herbert Hintner was the second president of the Jeunes.
He is a tall man from the Altoatesino mountains, born in the Valle di Casies, who for the love of Margot Rabensteiner, moved to San Michele Appiano, settling alone the fascinating Strada del Vino (wine route).
His restaurant, Zur Rothen Rose, (the Red Rose) whose gastronomic roots can be traced back to 1773, is situated in a Thirteenth century building in a small village with a plenty of local appeal. It's name changed to Zur Rose under Peter and Rosa Rabensteine's busy management, until their daughter and son in law took over in 1985. Margot and Herbert met while still in the hotel school in 1974.
Then came the three restoration of 1991/96/02, The changes came about slowly, bit by bit, first three rooms, a weel stocked cellar with 600 label (which Margot take care of ) and a kitchen which was Herbert's reign until he was joined by his son Daniele who is learning and making excellent progress at the side of his father.
Herbert is not one to masquerade the original flavours with sauces. He has one passion, and that is calf's head.
It's an extraordinary creative cuisine which harmonizes the local gastronomy with traditional Italian delicacies.
The carefully prepared dishes are genuine and tasteful.
The restaurant's wines deserve a special mention: more than 600 different brands are stored in the wine cellar.
There is also an outstanding selection of bottles from South Tyrol.
