Scolaris Vini from S. Lorenzo Isontino (GO) is a wine-producing Company located in Friuli Venezia-Giulia (North-East of Italy) in the so-called "Collio", an area renown and appreciated for the high quality of its wines.
The Company has a long history and a solid tradition: founded in 1924 by Giovanni Scolaris Senior was one of the first companies to cultivate, winemaking and sell the original wines of the region (DOC Collio and DOC Isonzo).
Nowadays, Marco Scolaris thanks to his passion for viticulture and his total dedication and commitment, lead the Company merging the tradition of the family with the new technologies of production, with a constant attention to every detail from vineyard, to cellar and bottle looking for excellence at every stage.
Scolaris winery, through continuous refinements, represents a near age-old experience where technological innovation becomes the tool to produce wines that respond to consumers' trend towards the search for ancestral tastes revised and updated in modern key.

The History

The history of one of the most prestigious wine-maker in the Collio region - the Scolaris family from San Lorenzo Isontino - was started by Giovanni Sr. in 1924.
His idea was simple but, for the times, brilliant: He united his own vineyards' production to that of other winemakers in the Collio region, guaranteeing the purchase of their grapes year after year, which gave him enough to sustain his project of expansion. He was a real precursor of the times and transmitted his ability to clearly read the future to his descendents: he started selling his wine by carrying it in barrels on a small horse-carriage, with great courage but also extraordinary willingness.
After World War II, Giovanni Sr. was helped by his son Giovanni Jr. who had studied oenology in Conegliano Veneto. In 1958 they participated with their bottled wine at one of the most important exhibition in the province of Gorizia, held in Monfalcone and won first prize: since then they have participated in the most important oenological competitions receiving many prizes and awards and Scolaris wines have been mentioned with high scores in several specialized wine guides. By the end of the sixties, the Collio region, thanks to a small group of highly intuitive wine-makers like Scolaris, began to write one of the most beautiful pages of Friulian - and Italian - oenological history, thus starting to making its wine well-known to the most expert consumers all around the world.
In 1980 arrived the third generation, with Marco Scolaris who first studied oenology and then business administration: he continued the heritage of his grandfather and father, whose strong points were partnerships and vineyards. He increased the number of his own vineyards while boosting and consolidating relations with the winery's traditional suppliers of grapes offering them valuable help in vineyard management aimed at a specific goal: growing grapes that kept the traditional Collio imprint, expressed through the ensemble of aromas and the depth and breadth of tastes that have made these wines a qualitative reference point.
Blending tradition and modernity has always been the Scolaris philosophy and Marco is now its interpreter with the aim to find confirmation from the market of the heavy but fascinating work of the wine-maker.

Guided Tours

Guided Tours It is possible to book a guided tour (about one hour) of the Scolaris Vini Winery visiting the vinification equipment and ageing cellars, receiving information about the Collio land and the main vineyards and tasting some of the current vintages on request.

WineTasting

It is possible to taste our wines at the new tasting room, inside the Scolaris Winery, recently restored keeping unchanged the old stone walls of the historic family house. Here, in a warm welcoming atmosphere, you could sample our quality wines, toast with a glass of sparkling wine or enjoy unique wines obtained from old autochthonous vines rediscovered by Mr. Scolaris thanks to his passion for viticulture.

The Winery

The wine history of Friuli-Venezia Giulia began in 1924.
Mr. Giovanni Scolaris Sr was a real precursor of the times and his ability to clearly read the future was transmitted to his descendents.
He united his own vineyards' production to that of other winemakers in the Collio region and started selling his wine by carrying it in barrels on a small horse-carriage.
In the meantime he built his own little wine-cellar, which was meant to grow and develop with the company.
In the 30's the equipment was very simple. If we check the cellar plan of that time, we discover such an organization: acacia-tree wood vats; screw-press; manual piston pump; chestnut-tree wood barrels Hl 7; Slavonian oak-tree wood barrels Hl 3.
After World War II, Giovanni Jr. began to work in the cellar with his father.
In the late 50's, early 60's, radical decisions had to be made: wine had to be sold not only in bulk but better bottled.
Which meant great changes both in production and in enological technique.
Therefore Giovanni Jr. leaves the screw-press in favour of pneumatic press and started making fermentation at controlled temperature.
The winery was extended with a new production area and the first "Seitz" bottling line was bought, a sort of "Ferrari" at that time, which had a capacity production of 3000 bottles per hour.
In 1980 the third generation arrived: Marco Scolaris started a qualitative turning-point. He understood the importance of soft pressing for obtaining wines that express their qualitative potential at most. Moreover, he was one of the first wine-makers to use the new Vacuum Press Siprem.
The continuous improvements go on and the new fittings of stabilization, the realization of the cellar at even temperature for the fermentation and refinement of particular wines, the continuous search of selected yeasts for the personalization of the wines are achieved.

The Wineyards

The vineyards from which our wines originate are situated in two important DOC wine zones in Friuli-Venezia Giulia: in the Collio area and in the so-called "Isonzo del Friuli" belt. The wine zone DOC Collio extends over a hilly strip of land north of the Province of Gorizia, near the border with Slovenia, and covers around 1500 hectares of vineyards facing south and particularly suited for a quality and specialized wine-growing.
The Prealpi Giulie behind the vineyards serve as protective barrier to the colds winds blowing from the north while the proximity of the Adriatic Sea provides a mild and temperate microclimate.
The soil is composed by stratified marls and sandstones of Eocene origin that, with the passing of seasons, crumble under the action of the atmospheric agents and become an ideal substratum for the wine-growing.
The grapevines are mainly trained with the traditional double arched cane (cappuccina) system except for Pinot Grigio, Chardonnay and Sauvignon that are trained using the guyot system.
The yield per hectare is around 85/90 quintals of grape.
