Surrounded by the Apennine mountains, the province of Arezzo is formed by four valleys: The Casentino, the Valdarno, the Valtiberina and the Valdichiana.
The Valdichiana valley is entirely crossed by the Canale Maestro della Chiana (the Big Canal of the Chiana), built between the XVI and the XVIII century in order to drain it; this phenomenon has deeply marked the urban aspect of the valley: in fact the most important town centers are set on the sides of the hills, forming two different settlements.
The classic cuisine of the province of Arezzo is based on poultry, pork, olive oil, spinach and cheeses; amog the desserts not to be missed are the "bandino" and the "panina", sipping a good "Chianti dei Colli Aretini" wine or "Bianco Vergine della Vadichiana" one.
